Keto Gummy Experiments
Something happens to a person when they have removed most of the carbs in their daily diet. Actually, a lot of things happen, but today I am focusing on the cravings that I have experienced eating mostly fat and protein. Many keto-ers claim that after they have gotten away from carbs for a certain amount of time, they simply stop craving sweets. I am not one of them. I am jealous of those dieters. I still crave desserts and sweets all the time. Regardless, these cravings drive me and my family to experiment constantly with different keto and low-carb dessert and treat alternatives. This week’s obsession: homemade keto gummy bears! You heard that right. That sugary treat you could once indulge in as a child (and now salivate at the sight and smell of, as your children stuff their faces full of them and you quietly die a little inside with jealousy)….you could be eating them too again! Get the ratio of gelatin and flavor just right and this little recipe could become an absolute staple in your healthy keto diet! It took our family about a week of different combinations (and a lot of good research on what other people have tried) to land on the perfect recipe for reintroducing these delights back into our life. I am all about simplifying and perfecting recipes to make them easy to repeat over and over with as little mess to clean up in the process as possible, and am now happy to share with our newfound friends (that’s you) our Corbitt Family Keto Gummy Recipe! I realize that you may not need the step by step instructions for this recipe (you clever cook you), so feel free to skip over whatever parts don’t serve you. Let’s get this delicious party started!
Basic Keto Gummies
Equipment
- silicon gummy molds
- microwaveable container
- microwave
- whisk
Ingredients
- 5 tbsp Unflavored Gelatin (powder) I highly recommend Great Lakes' Pasture-Raised and Grass-Fed Unflavored Gelatin (the orange can).
- 1 cup Your choice of liquid Could be water with flavors added, could be juices, or even coffee or tea. Get creative!
- Sugar-free sweetener of your choice (to taste). Keep in mind the syrup you are creating for your gummies needs to have pretty intense flavor to be able to taste it in the end product.
Instructions
- Add your chosen sweetener and flavors to your chosen liquid in a microwave safe container and mix well. For this batch I used Crystal Light Lemonade as the basic liquid and added a generous couple of squeezes of lemon lime flavored Mio and some splenda to intensify the sweetness.
- Add the gelatin powder to your liquid (it will not want to mix at first, but give it a stir anyway).
- Pop the mixture into the microwave for 30 seconds.
- Pull out the mixture and stir it up.
- Put it back in the microwave for another 15 seconds.
- Pull out the mixture and stir it up again. You can repeat this until the mixture is a fully combined syrupy liquid mixture. Try not to over-heat.
- Take your gelatin syrup mixture now and pour, eye-dropper, or spoon it into the cavities in the silicon mold you chose for today's amazing gummies. (Note: it helps to have your silicon mold(s) sitting on a flat tray of some kind that will fit on a shelf in your refrigerator. This will make the chilling process alot less messy….trust me.)
- Once the mold is filled up, carefully transfer them to a refrigerator shelf and let them set up for about 30-40 minutes.
- Pop those beauties out of the mold and transfer whatever doesn't get eaten up immediately to a food safe container to store for up to a week (if you have kids you'll be lucky if they don't get eaten before the end of the day…so don't worry).
