A simple recipe for low-carb gummies that can easily be adjusted to satisfy your cravings and get a dose of healthy collagen at the same time.

Equipment

  • silicon gummy molds
  • microwaveable container
  • microwave
  • whisk

Ingredients
  

  • 5 tbsp Unflavored Gelatin (powder) I highly recommend Great Lakes' Pasture-Raised and Grass-Fed Unflavored Gelatin (the orange can).
  • 1 cup Your choice of liquid Could be water with flavors added, could be juices, or even coffee or tea. Get creative!
  • Sugar-free sweetener of your choice (to taste). Keep in mind the syrup you are creating for your gummies needs to have pretty intense flavor to be able to taste it in the end product.

Instructions
 

  • Add your chosen sweetener and flavors to your chosen liquid in a microwave safe container and mix well. For this batch I used Crystal Light Lemonade as the basic liquid and added a generous couple of squeezes of lemon lime flavored Mio and some splenda to intensify the sweetness.
    Examples of Sugar-free Sweeteners and Flavorings You Could Use
  • Add the gelatin powder to your liquid (it will not want to mix at first, but give it a stir anyway).
  • Pop the mixture into the microwave for 30 seconds.
  • Pull out the mixture and stir it up.
  • Put it back in the microwave for another 15 seconds.
  • Pull out the mixture and stir it up again. You can repeat this until the mixture is a fully combined syrupy liquid mixture. Try not to over-heat.
  • Take your gelatin syrup mixture now and pour, eye-dropper, or spoon it into the cavities in the silicon mold you chose for today's amazing gummies. (Note: it helps to have your silicon mold(s) sitting on a flat tray of some kind that will fit on a shelf in your refrigerator. This will make the chilling process alot less messy....trust me.)
  • Once the mold is filled up, carefully transfer them to a refrigerator shelf and let them set up for about 30-40 minutes.
  • Pop those beauties out of the mold and transfer whatever doesn't get eaten up immediately to a food safe container to store for up to a week (if you have kids you'll be lucky if they don't get eaten before the end of the day...so don't worry).
